Applebee’s Chili Lime Chicken Recipe

The Applebee’s chili lime chicken recipe is like Nachos on steroids. It is one of my favorites when I’m taking the family to Applebees and it is a great copy cat recipe to take a crack at if you’re new to making restaurant recipes at home.
Ingredients and instructions for Applebee’s Chili Lime Chicken Marinade:
1 cup water
1/2 lime, juiced
1/3 cup teriyaki sauce
3 cloves garlic – minced
1 teaspoon liquid smoke
1 teaspoon tequila
1/4 teaspoon ground ginger
1/2 teaspoon salt
Whisk the above ingredients together and set aside.
Ingredients and instructions for Applebee’s chili lime chicken salad dressing:
1/4 cup real mayonnaise – low fat okay
1/4 cup sour cream – low fat okay
2 tablespoons Spicy, Chunky Salsa
1 tablespoon Milk – low fat okay
1 teaspoon cajun blackening spice
1/4 teaspoon dried parsley
1/4 teaspoon hot sauce
1/8 teaspoon dried dill weed
1/8 teaspoon cumin
Wisk together and set aside.
Ingredients and instructions Applebee’s Chili Lime Chicken:
1 pound boned, skinned chicken breasts
Marinade the chicken in the mixture you have set aside for at least 2 hours. Overnight is best. Once marinated, grill the chicken for 3- 5 minutes on each side until it is cooked thoroughly. Discard the remaining marinade.
Brush the grilled chicken with some of the salad dressing, and then place the chicken on a bed of Tortilla chips. Next sprinkle the chicken and chips with shredded 1 cup of Colby jack cheese or to taste. Broil until the cheese has melted.
Dip in the dressing and enjoy. Warning, this dish can be spicy so use caution when serving to small children.
